So early this week we got a horrible computer virus. It was awful. We were finally able to clean it up but now our computer runs really slow. Sorry about such a delay in posting.
We blessed Amiah a few weeks ago and it was such a fantastic experience. The blessing was beautiful and she was as content as could be in the center of a circle of bouncing hands. Unfortunely the baby that was blessed after her was not as content and screamed through the entire blessing. Poor baby. After words we had a brunch with our families and it was so nice to spend time with everyone. Thank you all for coming!!! The down side was that the batteries in my camera died and I wasn't able to get any pictures of the blessing! Thankfully my brother-in-law, Will took a bunch for us but is going to put them on a CD and mail them so I only have 1 picture to show so far:
Mickey has sort of a silly smile and PJ wouldn't smile (pretty rare for our smiley boy). Anyway, I will post more as they come in.
Not too much has happened since my last posting. Thank you all so much for your recipe ideas. I am loving it!! It's nice to make different things for a change. Eventually they will all be in my own recipe book.Amiah has grown so much. She is already growing out of her 0-3 cloths and is wearing some of her 3-6!! I haven't taken a weight on her but we know she is about the same as her 4 month old cousin and Amiah is only 8 weeks old!! She smiles like crazy and is starting to coo more and trying to giggle. Every now and then she gets one out but it still takes a lot of concentrated effort (except when she is asleep. Yes she LAUGHES hard and loud while she is sleeping!) She is also sleeping through the night!! Yup, goes down at 9, eats at 11, and then sleeps til 7 and then eats and goes back to sleep til 9. I'm loving it!! If only PJ would sleep all night!
I finally took down the toddler bed and put him on his own twin. He is the happiest kid on the block right now. He loves his new bed and the Buzz LightYear covers for it (thanks grandma!) We didn't put a rail up either and he has yet to fall off (knock on wood!).
We got the first big snow of the season last night. 5 1/2 inches! It rained prior to snowing so the roads and cars were covered in a layer of ice and then the snow. Pretty crazy. PJ just keeps staring at it. It's the first year he has seen snow and GETS that it's cold but FUN. Time to find some snow boots!!
I can't believe Thanksgiving is just over a week away. Craziness! Robyn, here is that awesome Sweet Potato Recipe:
2 lbs sweet potato, peeled and cubed
2 TBSP orange juice3/4 cup brown sugar
1/8 tsp ground nutmeg
2 TBSP butter, cubed
1 cup mini marshmallows
For Streusel topping:
1/2 c brown sugar
1/3 cup flour
3 TBSP butter
1/2 cup pecans (optional)
(combine with fork, pastry cutter or fingers til crumbly)
Preheat oven to 350 degrees F. In a large saucepan cook sweet potatoes in salted water over medium-high heat for about 20 minutes or until done. Drain and add orange juice, brown sugar, nutmeg and butter. Whip until smooth. Spread into a medium size casserole dish and top with marshmallows. Add streusel topping over the marshmellows. Bake in preheated oven for about 10 minutes or until marshmellows are golden brown. Enjoy!!
Hope you all try in a love it as much as we do! I actually put it in a pretty deep-dish pie plate. Even if you don't like sweet potatoes, you have to try these. AMAZING.

Thanks--we're doing another big Thanksgiving this year (7 adults, 12 kids) and I need lots of good food to impress them with!

ReplyDeleteI can't believe how big Amiah is already. Lexie just made the transition from her 0-3's 2 weeks ago (so I guess at 10 1/2 weeks). They sure grow fast!
