Microwave Experiment

It's Saturday morning, fairly early and already my apartment is getting HOT. We have a window air conditioner that we use on most days but the constant humming of the fan drives me bonkers (most fan noises do). For future reference, should you ever watch my children and they are unhappy or hungry and you don't know what to feed them, they LOVE mini muffins. I mean LOVE! They gobble up these little buggers so fast it isn't even funny and would eat them for every meal. They particularly love lemon poppy seed and chocolate chip the best.
I decided I wanted to make muffins for breakfast. I didn't want to turn the oven on because even with the AC on the oven literally turns the apartment into an oven and that would literally cook US. I pulled out the ol BB and googled "microwave muffins". Most recipes look like any other recipe, nothing noticeably different actually. . So I pulled out my silicon mini muffin pans, Martha-something muffin mixes and milk and went to work. Made the mix as directed, greased the pans and the first batch cooked on high for 4 min until they "felt" done. They are flat on top and very pale. Maybe more appropriately called "Muffin HATS" since they are bottom heavy and don't really have tops. The second batch I did at 50% power for 7 min. Didn't do anything different other than take longer. Mostly, they are edible if desperate. A little dry so maybe add more milk to the mix? If cooking on high, next time I will do it for 3:30 instead of 4 minutes. They might not have the beautiful golden look and beautiful domed tops that most muffins have, but my muffin monsters are eating them, and that's all I needed. So, that being said, I will consider this experiment a success.

  1. Great idea. I had another recipe sent to me this week that you might enjoy. Dashboard smores. Assembly smores with graham crackers, marshmallow and chocolate. Wrap tightly in aluminum foil. Set on the dash of your car on a HOT summer day for 15 minutes. Unwrap and ejoy.
